MOBILE is for mobile Food trucks and food carts that need commissary only

PRODUCTION/CATERERS is for any business that needs to prepare food in the facility

Once you sign your contract your hours can not be changed. It is best to choose a lower hour option if unsure. You can always use more hours than your contract and and pay for extra hours at the end of the month
